Wok Veggie Turkey Salad

 
This is so easy, just fire everything into one big wok and cook it. Really handy for bringing for lunch and throwing in a microwave or having for dinner.


Ingredients:

 1/2 sweet potato

Spinach

Curly Kale

Frozen peas

Peppers ( I used frozen)

1 Turkey Fillet

2 Garlic Cloves

1 Tablespoon Turmeric

1 Veg Stock Cube

1 Tablespoon Olive Oil


Method:

1. Add Olive Oil, Garlic and turmeric to frying pan and simmer. Add chopped turkey and sweet potato cubed and cook.

2.  When turkey is cooked add all the veg and turn on low heat until soft.

3. Add the stock cube on its own followed by 100ml of boiling water and leave to simmer until left with a thick saucy consistency and serve.
