Chicken Curry

 
This is one of the best curry's I have had in quite a while and it is so simple to make.




Ingredients:

2 Chicken Fillets

1 Yellow Pepper

2 Garlic Cloves

1 Onion

1 small Sweet Potato

1 Tin of Chopped tomatoes

1 tablespoon Cumin

1 tablespoon Paprika

1 tablespoon Turmeric

2 tablespoons of Curry Powder ( I used Tesco own brand mild curry powder)

2 tablespoons olive oil

1/4 pint of boiling water

Method:

1. Chop all ingredients. Heat olive oil and add cumin, paprika and turmeric, add chicken and coat in the spices.

2. When chicken is cooked add the rest of your ingredients and leave to sauté for 5 to 10 mins,

3. Add the curry powder and tinned tomatoes and simmer until almost all juice has dissolved.

4. Add water and turn heat down to lowest and leave to simmer for 15 mins then serve.
