Cajun Chicken Quinoa Salad
This recipe has a lot of flavors but a really basic dish. This was my first time using quinoa but it certainly won't be my last! I haven't had a good cajun chicken since I was diagnosed but this recipe is so good.
Ingredients:
1 Chicken Breast
Quinoa
Spinach
Spiralised Butternut Squash (can buy or make your own)
For the sauce:
Olive Oil
2 Cloves of crushed garlic
2 tablespoons paprika
Sprinkle of Thyme
1 tablespoon Oregano
1/2 tablespoon of Crushed Red Chillies
Brown Sugar to sweeten
Salt
Pepper
Method:
1. Mix all the ingredients for the sauce together in a bowl. The reason I have not specified how much oil or sugar to add is that it is completely up to your own tastes so make sure to experiment.
2. Place the chicken fillet in an oven dish on some tinfoil and cover in the sauce. Put in a preheated oven and leave at 180 degrees for 25 - 30 mins.
3. Meanwhile add as much quinoa as desired to a cup and fill with cold water and drain. Add the drained quinoa to a pot of 5 part water to 1 part quinoa and leave for roughly 20 mins until the water has drained.
4. Pop your spiralised butternut squash in the microwave for 1.5 - 2 mins.
5. When all cooked place on a plate with some chopped spinach and enjoy.
