As it is pancake tuesday there is no better day for me to share my favorite healthy blueberry pancake recipe with you. Super simple and super tastey.
Ingredients:
125g of gluten free self raising flour ( I only had normal flour so added an extra 2 spoons of baking
powder)
1 tablespoon of Baking Powder
150 ml of Soya Milk
1 egg
75g of blueberries
25g butter melted
1 tablespoon of olive oil
Method:
1. In a large bowl whisk together the flour and baking powder.
2. Whisk together the egg and milk and whisk into the flour until smooth.
3. Whisk in the melted butter, then stir in blueberries.
4. Heat the oil in a frying pan over a medium heat, then spoon tablespoons of the mixture into the pan. Cook for 2 - 3 minutes until golden underneath, then flip over and cook for a further 2 - 3 minutes. Repeat with the remaining batter.
5. Serve with your favorite toppings.

Tips for when you have been glutened
For some reason, every time I get glutened I find myself frantically searching for cures or how to ease my symptoms as I some how forget what I did the last time. I am in no way medically qualified but it is just what works for me personally and what I have learned from myself. Here is a list of my essentials for getting over a bad glutening:

It's been a while.....
So it's been a while since I posted anything on this page, for a while it felt like I had nothing to post, then all of a sudden I had too much to post that I didn't have the energy to mentally deal with it yet.
Since my last post I have hit the year diagnoses mark, it feels a bit bitter sweet, I'm glad that I have adapted to everything so easily but I can't believe it's only been a year. So much has happened in the last year I just feel like it's been a lifetime. When I was diagnosed I remember everyone telling me how different I would feel this time next year and while there is significant improvement in my energy

5 things I wish people without Coeliac Disease would understand
I personally am so sick of how people see coeliac disease, if it was just about the food I would have no problem, people don't seem to realise that there is a hell of a lot more to being coeliac than just eating gluten. So as you might have gathered my last post was a month too soon, don't know how I made that mistake but I managed it. In terms of what has been going on since then I guess a lot has happened but more so in April than May.

Cajun Chicken Quinoa Salad
This recipe has a lot of flavors but a really basic dish. This was my first time using quinoa but it certainly won't be my last! I haven't had a good cajun chicken since I was diagnosed but this recipe is so good.
